A Premier Cru Chablis from a 0.14 ha plot of 32 year old vines called Côte de Jouan in the village of Courgis with clay limestone over kimmeridgian subsoil.
The pressed grapes are rigorously selected and only the best of the grape juice is used, anything that is not to the required standard is sold.
Aged for around 12 months in oak barrels with natural yeasts. Then blended in tanks for an and allowed to rest for around nine months before bottling.
Gravity is preferred over pumping and the wines are bottled with no fining and no filtration.
