A 1ha plot of Sauvignon Blanc from 30-35 year old vines grown on a west facing plateau with a shallow clay-loam soil covering the subsoil of limestone. There are a large number of stones present due to the degradation of the parent rock.
The wine is aged for around 11 months in oak barrels with natural yeasts. Gravity is preferred over pumping and the wines are bottled with no filtration and only a very light fining.
Clément works in a very natural and organic way, although not certified organic these are the methods that he employs in the vineyards.
