Chardonnay from a 0.82ha plot of 31 year old vines grown on a slightly west facing plateau with clay silt with a large concentration of calcareous stones.
The pressed grapes are rigorously selected and only the best of the grape juice is selected, anything that is not to the required standard is sold. The wine is aged for around 11 months in oak barrels with natural yeasts. A selection of barrels are used which have already seen many other vintages. Gravity is preferred over pumping and the wines are bottled with no filtration and only a light fining.
Clément works in a very natural and organic way, although not certified organic these are the methods that he employs in the vineyards.
